Shredded beef and lobster 'carnitas'

Lobster Carnitas

Your beef and cheese cravings are probably always at an all-time high. The only problem? Burritos, quesadillas, and enchiladas are pretty much guaranteed to wreck your diet. They're fat, carb, and calorie bombs. 

But with this easy-to-make version of carnitas, loaded with high-protein lobster and beef chuck, you can get all the flavor without the guilt.

Pro tip: These melt-in-your-mouth carnitas pair perfectly with this spicy Michelada cocktail, which also happens to be low in calories.

Ingredients 
2 Tbsp vegetable oil
3 lbs beef chuck, cut into large cubes
1 Tbsp kosher salt
2 cups minced onion
6 garlic cloves, chopped
1⁄2 tsp cumin
1 tsp coriander
1 tsp smoked paprika
1 Tbsp chipotle in adobo sauce
1 (15 oz) can chopped tomatoes
2 lobster tails or about 3⁄4 lb cooked lobster meat
8 tortillas
Scallions, jalapeno pepper, onion, cilantro, sour cream (for serving)
How to make it 

Preheat oven to 350 ̊F.

Heat oil in a heavy-bottomed, oven-safe pan over medium-high heat. Pat beef cubes dry and toss with salt. Add beef to pan and cook until browned on all sides. Remove from pan and set aside.

Drain oil from pan, add onions, and cook 3 minutes over medium heat. Stir in garlic, cumin, coriander, paprika, chipotle, and tomatoes, and bring to a boil. Remove from heat and return beef to pan along with any juices. Cover and transfer to oven; cook 2 hours.

Meanwhile, bring a large pot of salted water to a boil. Drop lobster tails into water and cook until shells turn bright red, about 5 minutes. Transfer to a large bowl filled with ice water and let cool 5 minutes. Remove lobster meat from shells and chop into chunks.

When beef is done, shred with a fork and set aside. Place tomato mixture in a blender and blend until smooth. Add 1⁄2 cup of the purée to the beef. If meat seems dry, add more purée. Fold lobster into beef mixture, adding more purée as needed.

Serve with warm tortillas, sliced scallions, jalapeno pepper slices, minced onion and cilantro, and sour cream. If desired, pair with a side of grilled zucchini and squash scapece.

Poblano Pepper Marinade For Chicken, Fish, or Vegetables

When you find the right combination of spice and flavor, however, the average slab of grilled meat (or a pan of roasted veggies) will not only leap from from dull to delicious, but also impart some kickass health benefits.

That's why we love this devilishly spicy marinade from Jean-Paul Bourgeois, the Louisiana-born barbecue mastermind and executive chef at Blue Smoke in New York City. Bourgeois' marinade is loaded up with poblanos, jalapeños, cilantro, and a healthy serving of tangy Tabasco sauce to create the perfect balance of heat, bright flavors, and, y'know, more heat? 

For those of you guys who douse their food in hot sauce, this recipe is guaranteed to take your home-cooked food up a few notches. And if you're not a fan of turning your mouth into a momentary fiery inferno, you might want to consider starting now—spicy food has been shown to protect against heart disease and help aid weight loss.

8 poblano peppers, seeded
2 bunches cilantro, stemmed
3 jalapeños, seeded
3/4 cup of water
1 Tbsp of Kosher salt
1/2 Tbsp freshly ground white pepper
1/2 cup Tabasco Sauce
How to make it 

In a blender, combine the jalapeños and poblano peppers, cilantro, water, Tabasco Sauce, salt and pepper. Puree until incorporated.

Use any part of the chicken (you can also use fish or vegetables) you would like and marinate for at least 12 hours. 

Remove excess marinade with your hands prior to grilling. This recipe will make roughly 3 1/2 cups of marinade.

Spicy Mexican Michelada

Michelada Cocktail and Lobster and Beef Shredded Carnitas

We'll admit, the mix of ingredients in this low-calorie version of the classic Michelada cocktail may sound a bit strange, but combined they work together to create a nuanced, spicy, and all-around great-tasting savory cocktail.

Not to mention, this flavor-packed cocktail will pair perfectly with these delicious (and high-protein) shredded beef and lobster "carnitas"—it's a combination that'll satisfy your craving for Mexican food, without wrecking your diet.

Juice of 1/2 lime
Celery salt
1 oz beef stock
Dash Worcestershire sauce
Dash Tabasco
12 oz Negra Modelo
How to make it 

Rim a pint glass with lime juice, then dip in the celery salt.

Fill with ice and add beef stock, lime juice, Worcestershire sauce, and Tabasco. 

Stir well, then add Negra Modelo.

BPA replacements like BPF and BPS aren't linked to fat bellies

About a decade ago, a huge outcry over studies that showed Bisphenol A, or BPA, a chemical compound used in plastic to make it tough, was an endocrine disruptor and could cause changes to breasts, testicles, brains, and body size, including upping the risk for abdominal obesity. People in love with their Nalgene bottles—which, at that point, contained the chemical at that point—tossed them away and switched to stainless steel or glass bottles until companies began offering BPA-free plastic bottles. Now you won’t find it around as much, as it’s been replaced by two other chemicals: Bisphenol F (BPF) and Bisphenol S (BPS).

Those similarly named chemicals don’t seem like they would be much different to BPA, but a new study from the University of Iowa showed that they don’t contribute to increasing gut size significantly. The researchers looked at data from a Centers for Disease Control study which, like some past studies, determined that BPA was indeed linked to increased obesity in people. The new chemical formulations, however, were not associated with abnormal weight gain in the data they looked at.

The study authors state that even though BPA is linked to obesity, and concentrations of BPF or BPS were not found to contribute to obesity in the study, “whether BPF and BPS at the same population exposure levels as BPA pose an increased risk of obesity is not known. Additionally, BPA has only been substituted with BPF and BPS in the past two decades.”

We suggest limiting your exposure to any of the chemicals as much as possible, and trading your plastic water bottles for stainless steel ones from companies like Miir, Contigo, and Hydro Flask. The double-walled steel containers keep your daily hydration dose colder (or blast of coffee hotter) than plastic, and, while not as light, are more durable and longer-lasting.

Cash rewards can help people lose weight and keep it off longer

One of the toughest parts about losing weight is keeping it off for the long-term. This is partly because, compared to our previous diet, the brain thinks we're in a period of starvation, so it battles back against the weight loss—driving up hunger. There are various ways to make the lost pounds stay lost, but a recent study published in the journal Social Science and Medicine showed that cash rewards can work well to extend the duration of weight loss.

For the study, the researchers set up an eight-month study that first had 161 subjects pay $168 to join a 16-week weight-loss program in which they were counseled weekly on how to sustain a healthy lifestyle. They also paid $119 to join a rewards program that gave them cash back or a lottery ticket which set them up with a 1-in-10 chance of netting 10 times the cash if they met their goals. Other rewards for hitting 5% or 8% at months four and eight were also offered. In all, they stood to get a maximum of $475 if they met all of the requirements.

By the fourth month of the experiment, those in the rewards group had lost more than twice the weight of the control group; at the eighth and 12th months, weight loss was still higher for those enrolled in the cash cohort. Also, about 40% of the rewards group lost 5% or more of their weight at month four, compared to 12% for the control; and at month 12 the cash group was at 28%, while the control barely reached 17%.

Cash paid out to the rewards participants ended up being $162, which left them with about a cost of $43 for the program—about 42% of subjects ended up with a profit. Though most lost money, they also lost weight and were happy to play the game, with around 80% saying they approved of the rewards arrangement.

"Even small amounts of weight loss, sustained over time, confer great health benefits and can help prevent chronic disease. This study shows that the enhancement and maintenance of weight loss is feasible through a rewards program with participant ownership, coupled with an evidence-based, medical weight-loss program," said study co-author Kwang Wei Tham, M.D., senior consultant in the department of endocrinology at the Singapore General Hospital.

1.How To Enter: Beginning at 12:01 a.m. (EST) on June 13, 2017, visit www.mensfitness.com Website and follow the CHIPS entry directions. All entries must be received no later than 11:59 p.m. (EST) on June 27, 2017.  Only one internet entry per person and per e-mail address will be accepted.  Subsequent entries on a single day will be disqualified.  Subsequent attempts made by the same individual to submit multiple internet entries on a single day by using multiple e-mail addresses or otherwise will be disqualified.  In the event of a dispute over the identity of an online entrant, entry will be deemed submitted by the authorized account holder of the e-mail address associated with the entry.  Authorized account holder is defined as the person assigned to an e-mail address by an Internet access provider, on-line service provider or other organization responsible for assigning e-mail addresses.  All materials submitted become the property of American Media, Inc. and will not be returned.

 2.Winner Selection / Random Drawing:  Winner will be selected in a random drawing to be held on or about June 27, 2017 from among all eligible entries that are complete.  The random drawing will be conducted by representatives from Sponsor whose decisions are final and binding in all respects relating to this Sweepstakes.  Odds of winning a Prize depend upon the total number of eligible entries received.

Total approximate retail value is a maximum of $19.98.
